Asparagus from Terlan




During the months of April and May the region of Siebeneich, Terlan and Vilpian celebrates the local asparagus, known as Margarete. Up to 70 tons of this noble vegetable are harvested from an area of about 25 acres. The cultivation of asparagus has a very long tradition in Terlan. Already during the interwar period the wealthy inhabitants of nearby Bozen came out to the ”country side“ to enjoy this spring speciality. In 1984 these culinary trips finally lead to the introduction of the first „Terlan asparagus season“ (Terlaner Spargelzeit). Since then these speciality weeks, during which we exclusively use the Margarete asparagus variety, have also been held in our restaurant with great success. We are serving the asparagus both traditionally prepared with ham, Bozner sauce and horseradish as well as in a number of variations and seasonal combinations, either raw or fried.
